Orange Butter Cookies


Preheat oven to 325º fahrenheit
Blend until creamy:
two tablespoons of sugar
1/2 cup of soft butter [melt in microwave or leave out overnight]
Beat in:
one egg
1/2 teaspoon dried grated orange rind
1/8 teaspoon orange zest
one quarter pinch lime zest
1/8 teaspoon almond extract
1/8 teaspoon vanilla extract
two-four drops orange oil
three tablespoons orange juice
1/8 teaspoon lemon juice
Stir in:
one 1/2 cups and two tablespoons of flour

Roll into balls, drop, and press onto a ungreased baking sheet in small rounds. Or, roll out dough with a rolling pin and create rounds with a cookie cutter. Bake at 325º for twenty to twenty-three minutes.
When cool, sandwich rounds around a filling of raspberry [shown above] preserves, apricot preserves , or whatever you would like.
Dust lightly in powdered sugar.

Box cake mix (any flavor)
1/2 cup of vegetable oil
2 eggs (room temperature)
about 2 cups of chips, any flavor and or nuts :)

Sift cake mix...Mix all, spoon on cookie sheets and bake at 350 for 8 - 12 minutes

Stuffed Strawberries

8oz package of cream cheese (room temperature)
1/2 cup of powdered sugar
1/4 tsp of vanilla extract

20 or more ripe strawberries with the bottoms cut so they can stand and then a cross cut on top for the filling.

Top with chocolate and add nuts or sprinkles if desired

if you like you can make you're own chocolate to top them by melting 16oz semisweet or milk chocolate chips on a double boiler and add 2 tablespoons of shortening
